What I'm Wearing #11 {Birthday Edition}

I know it's a little late, but as mentioned, things have been more than crazy around here.


I've only got one outfit to share with you all this week, because mostly I've been wearing grubbies to pack and move in and have had moving on the brain, so forgot to take pics.  But I did get dressed up once this past week-Tuesday, which was my birthday!  Yep, I've turned another year older!


I went over to my momma's for the day since my hubby had to be out of town for the week for work.  She took me out to lunch at this awesome little restaurant near her that we used to go to when I was younger.  The food was de-lish!

{Woohoo!}

I am happy to say we are {almost} all moved in!  It's been a week filled with LOTS of cleaning {I had to give the old apartment a head-to-toe scrub down}, unpacking and finding homes for everything.  There are still a few small things that need to make their way over from the apartment, but nothing major.

Annnnnddddddddddddd..........as of yesterday, I once again have internet!  Yay!!!
It's been kinda hard to get what I need to get done without the computer.  You know, silly things like my homework, and paying bills and getting our water turned on {here in Mulberry, the water and sewage company has you complete an application, which they email you.  Hard to get to the email without internet.}  So, today has been MAJOR catch up day.  But I wanted to drop by and let you all know that progress is being made!

What I'm Wearing #10

I know I promised things would return to normal, and they really will!  But not this week.  We FINALLY got the news back on our house and we close tomorrow!!!  So, that means this week has been filled with packing, cleaning and trying to squeeze some homework in there (because, yes, I'm going back to school. Ugh.)  Top it all off, my dad was still here visiting.  To say that things have been chaotic in my life lately would be the understatement of the century : )

But I did want to get back into the swing of things, even if it's only a little bit at a time.  
So, here's this week's What I'm Wearing (sorry it's a day late.)

So, here's a sad story: The tights I'm wearing in this picture bit the dust after only being worn twice.  Unfortunately, the Forever 21 stores down here in Florida don't carry them and they've been out of stock on the site since November.  This makes me SOOOOO sad!  So, I'm asking a favor from you, my lovely readers.  If anyone can find a pair of these at their Forever 21, would you grab them for me?  I will pay you back for them, along with however much it costs you to send them to me.  And I'll send you something pretty for your troubles.  That's how much I want to replace them.

{Chirp Chirp}

Lately, I feel like I'm blogging to a field of crickets.  

A very large field of crickets.

Are you all still there?  I've seriously had ten posts in a row, including an awesome guest post by the wonderful and talented Jen from Tatertots and Jello, with zero comments.  Nada.  Nothing.  Zip.  Not that I expect you all to comment on every, single post.
I know that things have been hectic and sporadic around here for the last few months and I really am sorry.  I hope that it hasn't driven you all away!  I miss hearing from you and reading your lovely comments.

So...

YOUR 2 Cents

It's a new year and I'm thinking about making some changes.  But I wanted to get some feedback from you all before I do.

Right now, the weekly line-up is as follows:

Tuesdays: Hand-made Goodie of the Week, where I share something fun and handmade
Wednesdays: Who's That, where I feature an awesome blog or shop
and What I'm Wearing, where you get to critique my outfits from the past week
Thursdays: Tipping Thursday, where I share my tips on everything from make-up to things I've learned along the way
Fridays: Fashion Fridays, where I share something fashion/beauty related.

Should I keep things as they are?  I want to add in a weekly linky party, where you all can show-off what you've been up to somewhere in there.  I'm also thinking about doing Who's That just once or twice a month.  I almost feel like I'm stretching myself a little too thin, with the blog and going back to school and my motherly duties.  Trying to coordinate guest bloggers every week has been more than hectic.  I don't want to blog because I feel obligated-I want you all to take something away from what I post.  So, I'm definitely feeling quality over quantity here.

So what do you think?  What do you want to see more of?  Less of?  Some tweaks here or there?

I really do want to hear what you have to say, so don't be shy!  Tell me what you think.

Guest Blogger: Tatertots and Jello

I had some technical difficulties with the post when I originally posted it, so I'm re-posting it for you all.  The wonderful and amazing Jen from Tatertots and Jello came by to share something yummy.  


Hi! I'm Jen from Tatertots and Jello! I am so excited to be here at Courtney's blog!! 





I would love to share one of my favorite recipes with you -- Chocolate Ganache Truffles. These are delightful to make for a Christmas Party or a New Years Eve dessert!

Chocolate Ganache Truffles

Ingredients:
  • 10 ounces bittersweet chocolate, chopped fine
  • 3 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 8 ounces semisweet or bittersweet chocolate, chopped fine
  • Sprinkles

Directions

  • Chop up the Chocolate. I used my food processor. But if you don't have one, you can can chop it up with a knife. 
  • Heat the heavy cream in a small saucepan over medium heat until simmering. Remove from the heat and pour the mixture over the melted chocolate mixture; let stand for 2 minutes. 
  • Using a rubber spatula, stir gently, starting in the middle of bowl and working in concentric circles until all chocolate is melted and mixture is smooth and creamy.
  • Place in the refrigerator for 1 hour. 

  • Using a melon baller, scoop chocolate onto a sheet pan lined with wax paper and return to the refrigerator for 30 minutes. 
  • Place the 8 ounces of chocolate into a medium mixing bowland microwave the bowl for a minute on power level 3, check it each minute to see if it's melting. 
  • Remove the truffles from the refrigerator and shape into balls by rolling between the palms of your hands. Use powder-free vinyl or latex gloves, if desired. 
 
  •  Then place the truffle in the bowl of chocolate. Use a slotted spoon and gently remove the truffle from the chocolate and gently place it on the waxed paper. Add some sprinkles to the top.
  •  Allow to set in a cool dry place for at least 1 hour; or store in an airtight container in the refrigerator. Serve at room temperature.

We are back for our wonderful Christmas up in Washington visiting with my husband's ENTIRE family.  It was awesome!



I hope that you all had a lovely Christmas and a safe and happy New Year.  I have missed you all!  Really, I have.  But it has been nice to take a break and just have some time with my family.
