{Whatcha Eatin'} Pin-Worthy Recipes, Dinner-Style

One of the things I love about Pinterest is finding things I normally wouldn't have come across, and in the process finding more awesome blogs to follow!  Here are some recipes I've found via Pinterest and tried out.  Hope you enjoy them too!


This simple biscuit pizza bake is from Food.com and the little man loved it!


We made this yummy bowtie mushroom spinach pasta from Better Homes and Gardens for St. Patty's Day (we dyed the paste green!)


I love love LOVE this goat cheese and pesto pork loin recipe from Our Family Treat (if you've been following along for a while, you might have seen this one before)!


I made these one night for company and there was not a shred left!  These chicken caesar sandwiches from the Girl Who Ate Everything are super-easy and delicious!


This is what I had for lunch today-a guacamole tomato grilled cheese.  It might not sound all that appetizing, but trust me, it is!  The how to can be found over at Two Peas and Their Pod.


This isn't exactly a full dinner, but a great recipe nonetheless.  I made the taco seasoning and it was AMAZING!  I will never buy those little packets from the store again.  You can find the recipe for the taco seasoning along with many others over at Self-Reliance by Jaime.


This has to be one of my very favorite dinner recipes that I've tried.  These Southwestern Egg Rolls from Cake and Allie are soooooooooooooo good!  I changed up the recipe a little when I made them, so I'll share it along with my changes in red.
Southwestern Egg Rolls
For the egg rolls:

2 cups frozen corn, thawed- I just used a 16 oz. can of corn and drained it

1-15 oz can black beans, rinsed and drained
1-9 oz package frozen chopped spinach, thawed and squeezed dry with paper towel
I'm not a fan of frozen spinach, so I used fresh-about 2-3 cups and chopped it up
2 cups shredded Mexican cheese
1-7oz can diced green chiles, drained-I omitted these
4 green onions, finely chopped
1 tsp ground cumin
1/2 tsp chili powder
1 tsp salt
1/2 tsp cayenne pepper
I added one large chicken breast, cooked through and shredded, to all of this, too.
1 package of egg roll or wonton wrappers


Preheat oven to 425F. Line 2 baking sheets with aluminum foil and spray lightly with cooking spray.
In a large bowl, mix together all of your ingredients (minus the egg roll wrappers, of course.) Using a small spoon, scoop a small amount of filling onto the wrapper. Starting at a corner, carefully start to roll the wrapper. When it’s slightly rolled, tuck in the two side and continue rolling to the last point. Wet your finger with water and dab a bit on the corner to seal the egg roll. Repeat with remaining wrappers and filling, placing them slightly apart on the baking sheet.
Lightly spray the tops of the egg rolls with cooking spray and bake for 15 minutes, flipping them at least once during baking.
